3 medium bananas or 2 large bananas, mashed
2 tablespoons golden syrup
¼ cup caster sugar
1 egg or (you can use egg replacer – Vegetarians)
1 cup self-raising flour
Pinch salt
Cinnamon sugar


  1. Heat oven to 180°C and grease and line the base of a loaf tin.
  2. Mash bananas in a medium sized bowl, then add golden syrup.
  3. Add caster sugar and mix well.
  4. Add egg, sifted flour and salt and lightly mix until just combined.
  5. Pour mixture into loaf tin and lightly sprinkle with cinnamon sugar.
  6. Bake for 30 minutes or until a skewer inserted into the middle comes out clean.

Recipe notes

Best stored in the fridge and sliced as needed. Every now and then I like to add a handful of chopped dates when adding the flour. You can also add choc chips if you would like a choc chip banana bread.
